Season the chicken breasts with salt and black pepper. In a frying pan, heat vegetable oil over medium-high heat. Fry the chicken breasts for about 6-7 minutes on each side until they are crispy and cooked through. Remove from heat and let them rest.

Make the Waffle Batter
In a mixing bowl, combine all-purpose flour, cornmeal, baking powder, and a pinch of salt. In another bowl, whisk together eggs and milk. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the cheddar cheese.

Cook the Waffles
Preheat your waffle iron. Pour the batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden brown and crispy.

Prepare the Roasted Street Corn
Mix the roasted sweet corn with a pinch of salt and a drizzle of morita sauce. Set aside.

On a plate, stack a waffle, top it with a crispy chicken breast, drizzle with jalapeño-infused honey, and add roasted street corn on the side. Garnish with chopped cilantro and shaved sweet peppers.
