    Prepare the Cheddar Cheese Waffles

    In a bowl, mix together flour, baking powder, cheddar cheese, and a pinch of salt. In another bowl, whisk the egg and milk together, then combine with the dry ingredients. Cook in a waffle maker until golden brown.

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo until browned and fully cooked. Remove from heat and set aside.

    Make the Home Fries

    Dice the potatoes and cook in a skillet with olive oil until golden and crispy. Season with salt and black pepper.

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes or until the whites are set and the yolks are still runny.
