    Prepare the Chicken

    Season the chicken breasts with salt and pepper. Heat a skillet over medium-high heat and sear the chicken for 6-7 minutes on each side until fully cooked. Remove from heat and let rest.

    Grill the Shrimp

    In the same skillet or a grill pan, add a little oil and grill the shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove from heat.

    Make the Guajillo Sauce

    In a saucepan, heat the guajillo sauce until warm. Set aside.

    Sauté Vegetables

    In a separate pan, sauté chopped onion and red bell pepper in a bit of oil until translucent. Add diced tomato and cook for an additional 2 minutes.

    Melt the Mozzarella

    Once the vegetables are cooked, add the mozzarella cheese on top and cover until melted.

    Prepare the Corn Cake and Red Rice

    Heat the corn cake in a skillet until warm. Cook the red rice according to package instructions.

    Prepare the Cilantro Butter

    Mix softened butter with chopped cilantro. Set aside.

    Assemble the Dish

    On a plate, place the corn cake as the base. Top with the seared chicken breast, grilled shrimp, sautéed vegetables with melted mozzarella, and drizzle guajillo sauce on top. Serve with red rice on the side, a charred lime wedge, and a dollop of cilantro butter.
