Preparation and Assembly

    Roasting the Poblano

    Preheat the oven to 425°F (220°C). Place the poblano pepper on a baking sheet and roast for about 20 minutes, turning occasionally, until the skin is charred and blistered. Remove from the oven, place in a bowl, and cover with plastic wrap for 10 minutes. Peel off the skin, remove the seeds, and chop finely.

    Making the Burger Patty

    In a large bowl, mash the black beans with a fork or potato masher, leaving some chunks for texture. Add the roasted poblano, sunflower seeds, olive oil, salt, and pepper. Mix until combined. Form into 4 patties.

    Cooking the Burger Patty

    Heat a skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and heated through.

    Preparing the Crispy Carrot 'Bacon'

    Using a vegetable peeler, slice the carrots into thin strips. Heat a small amount of olive oil in a skillet over medium heat and fry the carrot strips until crispy. Season with salt and pepper to taste.

    Making the Jalapeño Aioli

    In a small bowl, mix together the mayonnaise and finely chopped jalapeño. Adjust the spice level to taste.

    Assembling the Burger

    Toast the burger buns if desired. On the bottom half of each bun, place a burger patty, followed by slices of tomato, red onion, alfalfa sprouts, and crispy carrot 'bacon.' Drizzle with jalapeño aioli, and top with the other half of the bun. Serve immediately.
