Prepare the Beer Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and beer until smooth. Let the batter sit for about 10 minutes.

Prepare the Oil
In a heavy-bottomed pot or deep-fryer, heat vegetable oil to 350°F (175°C).

Batter the Mahi Mahi
Dip each mahi mahi fillet into the beer batter, ensuring they are well-coated.

Fry the Mahi Mahi
Carefully place the battered fish into the hot oil, cooking for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Cabbage
In a bowl, toss the shredded purple cabbage with lemon juice and a pinch of salt. Let it marinate for about 5 minutes.

Assemble the Wrap
On a flour tortilla, place a lettuce leaf, top with fried mahi mahi, pickled cabbage, and drizzle with aji amarillo sauce. Fold the tortilla around the filling.

Serve the Baja Mahi wraps immediately, garnished with extra lemon wedges and aji amarillo sauce on the side.
