Ingredients for Bacon Eggs Benedict

Method

Directions for Bacon Eggs Benedict

  1. 1

    Make the Cheddar Cheese Waffles

In a large bowl, mix together the all-purpose flour, baking powder, salt, and cheddar cheese. In another bowl, whisk together the eggs and milk. Combine wet and dry ingredients and stir until just combined. Preheat a waffle iron and cook the batter according to the manufacturer's instructions until golden brown.

  2. 2

    Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

  3. 3

    Prepare the Home Fries

Dice the potatoes and toss them in olive oil, salt, and pepper. Sauté in a skillet over medium heat until golden brown and tender, about 15 minutes.

  4. 4

    Poach the Eggs

Bring a pot of water to a gentle simmer. Crack the eggs into a small bowl and gently slide them into the water. Cook for 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

  5. 5

    Make the Hollandaise Sauce

In a double boiler, whisk together egg yolks and lemon juice until thickened. Slowly drizzle in melted butter while continuing to whisk. Season with salt and pepper.

  6. 6

    Assemble the Dish

Place a cheddar cheese waffle on a plate, top with crispy bacon, a poached egg, and drizzle with hollandaise sauce. Finish with a spoonful of salsa arbor and sprinkle with chives. Serve with home fries on the side.
