    Prepare the Home Fries

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced potatoes and cook until golden and tender. Season with salt and pepper. Set aside.

    Cook the Shrimp

    In the same skillet, add another tablespoon of olive oil. Cook the shrimp for about 2-3 minutes on each side or until pink and cooked through. Remove from heat.

    Make the Omelette

    In a bowl, whisk the eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium heat and pour in the eggs. Cook until the edges start to set.

    Add Fillings

    Sprinkle the cooked black beans, white rice, shrimp, and shredded cheddar cheese onto one half of the omelette. Fold the other half over the fillings and cook for another 2-3 minutes until the cheese melts.

    Serve

    Slide the omelette onto a plate. Top with tomato-chile sauce, diced mango, a drizzle of crema, and sprinkle with aji amarillo and sliced scallions. Serve with home fries on the side.
