Prepare the Cake
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Mix and Add Boiling Water
Gradually add the wet ingredients to the dry ingredients, mixing until well combined. Stir in the boiling water until the batter is smooth.

Bake the Cakes
Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Prepare the Filling
Whip the heavy cream with the powdered sugar until soft peaks form. Set aside.

Assemble the Cake
Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of whipped cream on top, followed by half of the cherries. Place the second cake layer on top and repeat the process. Top with the remaining whipped cream and garnish with chocolate shavings.
