Method
Prepare Chicken Wings
Prepare the Chicken
Rinse the chicken wings under cold water and pat dry with paper towels.
Season the Wings
In a large bowl, combine flour, paprika, garlic powder, salt, and pepper. Toss the wings in the flour mixture until evenly coated.
Fry the Wings
Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).
Fry the Wings
Carefully add the wings to the hot oil in batches, frying for about 10-12 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Sauce the Wings
Cajun Rub
Toss the fried wings with cajun seasoning until evenly coated.
Make Blue Cheese Dressing
Combine Ingredients
In a bowl, mix blue cheese, sour cream, mayonnaise, milk, lemon juice, salt, and pepper until smooth.
Serve
Plate the Dish
Serve the crispy chicken wings with blue cheese dressing and celery sticks on the side.
