Garlic Pepper Aioli
Method
Prepare the Calamari
In a bowl, soak the calamari rings in buttermilk for at least 30 minutes to tenderize.
In a separate bowl, mix together flour, cornstarch, salt, black pepper, and paprika.
Heat the vegetable oil in a deep pan over medium-high heat.
Fry the Calamari
Remove the calamari from the buttermilk and allow excess to drip off.
Dredge the calamari in the flour mixture, ensuring they are evenly coated.
Fry the calamari in batches for about 2-3 minutes or until golden brown.
Remove with a slotted spoon and drain on paper towels.
Make the Aioli
In a bowl, combine mayonnaise, minced garlic, lemon juice, black pepper, and salt to taste.
Mix well until smooth and adjust seasoning as needed.
Serve
Serve the fried calamari hot with garlic pepper aioli on the side for dipping.
