Soup Preparation

    Prepare the Vegetables

    Start by washing the fresh tomatoes thoroughly. Remove the stems and cut them into quarters. Peel and dice the onion. Mince the garlic cloves.

    Sauté the Onion and Garlic

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Add Tomatoes and Broth

    Add the quartered tomatoes to the pot, followed by the vegetable broth. Stir well to combine all the ingredients.

    Simmer the Soup

    Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes until the tomatoes are soft and the flavors meld together.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender.

    Season and Serve

    Taste the soup and add salt and pepper to your preference. Serve hot, garnished with fresh basil leaves if desired.
