Method
Queso Preparation
- 1
Melt the Cheese
In a medium saucepan over low heat, combine the white cheddar cheese and cream cheese. Stir continuously until both cheeses are melted and well combined.
- 2
Add Milk
Gradually pour in the milk while stirring. Keep stirring until the mixture is smooth and creamy.
- 3
Mix in Other Ingredients
Add the diced green chilies, jalapeño peppers, garlic powder, onion powder, salt, and black pepper. Stir until everything is well combined and heat through. Adjust seasoning to taste.
- 4
Garnish
Once the queso is heated through, remove it from the heat and garnish with fresh cilantro before serving.
Tortilla Chips Preparation
- 5
Prepare the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 6
Cut Tortillas
While the oil is heating, cut each corn tortilla into 6 triangles.
- 7
Fry the Chips
Once the oil is hot, carefully add a few tortilla triangles at a time, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.
- 8
Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt.
