Cooking the Pasta

Boil the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Preparing the Vegetables

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the zucchini, bell peppers, cherry tomatoes, carrot, and broccoli. Cook for about 5-7 minutes until the vegetables are tender but still crisp.

Making the Sauce

Combine Ingredients

Pour the vegetable broth over the sautéed vegetables and bring to a simmer. Add the cooked pasta to the skillet and toss everything together. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste. Cook for an additional 2-3 minutes until everything is heated through and well combined.

Serving

Garnish and Serve

Remove from heat and garnish with chopped fresh basil. Serve immediately, adding more Parmesan cheese if desired.
