Method
Preparation
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season both sides of the chicken breasts with salt and black pepper.
Breading Setup
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of bread crumbs and Parmesan cheese.
Breading
Coat the Chicken
Dredge each chicken breast in flour, shaking off excess. Dip into the beaten eggs, then coat with the bread crumb and Parmesan mixture, pressing gently to adhere.
Cooking
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.
Assemble the Dish
In a baking dish, spread half of the marinara sauce on the bottom. Place the fried chicken breasts on top, then spoon the remaining marinara sauce over the chicken. Sprinkle mozzarella cheese on top.
Bake
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Serving
Garnish and Serve
Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired, then serve hot with pasta or salad.
