Marinating Chicken

    Prepare the Marinade

    In a large bowl, combine the buttermilk, hot sauce, salt, and black pepper. Mix well.

    Marinate the Chicken

    Add the boneless chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Breading and Frying

    Prepare the Breading

    In a separate bowl, mix together the all-purpose flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper until well combined.

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Chicken

    Remove the marinated chicken from the refrigerator. Dredge each piece in the breading mixture, pressing to adhere. Shake off any excess flour.

    Fry the Chicken

    Carefully place the breaded chicken into the hot oil. Fry in batches to avoid overcrowding, cooking for about 4-5 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (74°C).

    Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain excess oil.

Assembling the Sandwich

    Lightly toast the brioche buns on a skillet or in the oven until golden brown.

    Spread a generous layer of mayonnaise on the bottom half of each toasted bun.

    Place a piece of fried chicken on top of the mayonnaise. Add pickles and lettuce.
