Preparation
Peel and Cut the Potatoes
Begin by peeling the russet potatoes. Then, slice each potato into evenly sized strips, about 1/4 inch thick. This will help ensure they cook evenly.
Soak the Potatoes
Place the cut potato strips in a bowl of cold water and soak for at least 30 minutes. This step helps to remove excess starch, making the fries crispier.
Cooking
Heat the Oil
In a large pot or deep fryer, add the vegetable oil. Heat the oil to 350°F (175°C). Use a thermometer for accuracy.
Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels. This is crucial to avoid oil splatter.
Fry the Potatoes
Once the oil is hot, carefully add a handful of potato strips to the oil. Do not overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.
Drain and Season
Using a slotted spoon, remove the fries from the oil and drain them on paper towels. Immediately sprinkle with salt, black pepper, garlic powder, and paprika while they are still hot.
