Pasta Preparation

Cook the Pasta

In a large pot, bring water to a boil. Add a pinch of salt. Add 2 cups of elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Cheese Sauce Preparation

Make the Roux

In a medium saucepan over medium heat, melt 4 tablespoons of butter. Once melted, add 1 tablespoon of all-purpose flour and stir constantly for about 1-2 minutes until it forms a paste (roux).

Add Milk

Gradually whisk in 2 cups of milk. Continue stirring until the mixture thickens, about 5 minutes.

Add Cheeses

Reduce heat to low and add 1 cup of shredded cheddar cheese, 1 cup of shredded mozzarella cheese, and 1 tablespoon of grated Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.

Season the Sauce

Add 0.5 teaspoon of salt, 0.25 teaspoon of black pepper, 0.5 teaspoon of garlic powder, and 0.25 teaspoon of paprika to the cheese sauce. Mix well.

Combine and Serve

Combine Pasta and Sauce

Add the drained macaroni to the cheese sauce. Stir until all the pasta is evenly coated with the sauce.

Serve

Serve hot as is, or you can transfer to a baking dish, top with additional cheese, and bake at 350°F (175°C) for 20 minutes for a baked version.
