Marinating Chicken

Prepare the Marinade
In a large bowl, whisk together buttermilk, hot sauce, and a tablespoon of salt. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 4 hours, or overnight for best results.

Prepare the Coating
In a separate bowl, combine the flour, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to ensure an even coating.

Carefully place the coated chicken in the hot oil, frying in batches if necessary. Fry for about 8-10 minutes, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
