Method

Marinating Chicken

  1. 1

    Prepare the Marinade

In a large bowl, whisk together buttermilk, hot sauce, and a tablespoon of salt. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 4 hours, or overnight for best results.

Frying the Chicken

  1. 2

    Prepare the Coating

In a separate bowl, combine the flour, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.

  2. 3

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat vegetable oil over medium heat until it reaches 350°F (175°C).

  3. 4

    Coat the Chicken

Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to ensure an even coating.

  4. 5

    Fry the Chicken

Carefully place the coated chicken in the hot oil, frying in batches if necessary. Fry for about 8-10 minutes, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Making the Spicy Oil

  1. 6

    Prepare the Spicy Oil

In a small saucepan, combine cayenne pepper, paprika, brown sugar, salt, and vegetable oil. Heat over low heat until the oil is warm and the spices are fragrant, about 5 minutes. Remove from heat.

Serving

  1. 7

    Assemble the Dish

Place the fried chicken on a serving platter. Drizzle the spicy oil over the chicken, ensuring each piece is coated. Serve with pickles and slices of white bread.
