Marinating the Chicken

Prepare the Marinade
In a large bowl, combine hot sauce, buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

Marinate the Chicken
Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

In a separate bowl, whisk together all-purpose flour, cornstarch, baking powder, cayenne pepper, and salt.
Frying the Chicken

Bread the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, ensuring it is well-coated.

Fry the Chicken
Carefully place the breaded chicken into the hot oil, frying in batches if necessary. Cook for about 6-8 minutes per side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Once cooked, transfer the chicken to a wire rack or paper towel-lined plate to drain excess oil.

Toast the burger buns lightly on a skillet or in the oven until golden brown.
