    Prepare the vegetables

    Slice the medium tomato into thin rounds and set aside. If using whole pickles, slice them into thin rounds or spears based on your preference.

    Prepare the cheese mixture

    Grate the white cheddar cheese and set it aside. Slice the American and Swiss cheeses into thin slices or use pre-sliced cheese for convenience.

    Assemble the sandwich

    Take two slices of sourdough bread and spread 1 tablespoon of mayonnaise on one side of each slice. On the unbuttered side of one slice, layer the grated white cheddar, followed by the American cheese, Swiss cheese, tomato slices, and pickles. Top with the second slice of bread, mayonnaise side facing in.

    Grill the sandwich

    In a skillet or griddle over medium heat, melt 1 tablespoon of butter. Once the butter is melted and bubbling, place the assembled sandwich in the skillet, buttered side down. Grill for about 3-4 minutes or until the bottom is golden brown and the cheese begins to melt. Carefully flip the sandwich, adding the remaining tablespoon of butter to the skillet if needed. Grill for another 3-4 minutes on the second side, until it is golden brown and the cheese is fully melted.

    Serve

    Once both sides are golden and crispy, remove the sandwich from the skillet. Let it cool for a minute before slicing in half. Serve warm, optionally with additional pickles on the side.
