    Cook the Bacon

    In a large skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes, flipping halfway through. Once cooked, place the bacon on a paper towel-lined plate to drain excess grease.

    Toast the Buns

    While the bacon cooks, slice the challah buns in half. In a separate skillet or toaster, toast the buns until they are golden brown and crispy, about 3-4 minutes.

    Prepare Optional Toppings

    If using, scramble or fry the eggs in the same skillet used for the bacon, adding salt and black pepper to taste. Sauté the spinach in the residual bacon fat until wilted, about 2 minutes. If using avocado, slice it into thin pieces.

Assembly

    Build the Sandwich

    On the bottom half of each toasted challah bun, layer the crispy bacon slices, followed by scrambled or fried eggs, sautéed spinach, and cheddar cheese. Top with slices of avocado if desired.
