Method

Pretzel Dough Preparation

    Activate Yeast

    In a large bowl, mix warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    Add flour and salt to the yeast mixture. Stir until a dough begins to form. Knead the dough on a floured surface for about 5 minutes until smooth.

    First Rise

    Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape Pretzel Sticks

    Preheat the oven to 425°F (220°C). Punch down the dough and roll it into a long rope. Cut the rope into 1-inch pieces and shape them into sticks.

    Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each pretzel stick for about 30 seconds, then transfer to a baking sheet lined with parchment paper.

    Sprinkle Salt

    Sprinkle coarse sea salt on top of the pretzel sticks before baking.

    Bake

    Bake in the preheated oven for 12-15 minutes or until golden brown.

Garlic Herb Topping

    Prepare Garlic Oil

    In a small saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant. Remove from heat and stir in oregano and thyme.

    Brush Topping

    Once the pretzel sticks are baked, immediately brush them with the garlic herb oil and sprinkle grated Parmesan cheese over the top.

Tequila-Habanero Queso Preparation

    Melt Cheeses

    In a saucepan over medium heat, combine shredded cheddar cheese and cream cheese. Stir until melted and smooth.

    Add Flavors

    Stir in minced habanero pepper, tequila, milk, garlic powder, and salt. Cook for an additional 5-7 minutes until everything is well combined and heated through.
