Batter

Method

Batter Preparation

  1. 1

    Mix the Dry Ingredients

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until evenly mixed.

  2. 2

    Add Cold Water

Gradually add the cold water to the dry mixture while whisking continuously to prevent lumps. The batter should be smooth and slightly thick.

Fish Preparation

  1. 3

    Prepare the Fish

Rinse the fish fillets under cold water, then pat them dry with paper towels. Season both sides with salt and black pepper.

Frying

  1. 4

    Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Batter the Fish

Dip each fish fillet into the batter, ensuring each piece is fully coated.

  3. 6

    Fry the Fish

Carefully lower the battered fish fillets into the hot oil. Fry in batches to avoid overcrowding, for about 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to transfer the fried fish to a plate lined with paper towels.

Tartar Sauce Preparation

  1. 7

    Make the Tartar Sauce

In a small bowl, combine mayonnaise, chopped dill pickles, lemon juice, and salt. Mix well until smooth and set aside.
