Method

Chocolate Cake

    Prepare the Cake Batter

    Preheat your oven to 350°F (175°C). In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

    Mix the Wet Ingredients

    Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for about 2 minutes until well combined.

    Add Boiling Water

    Carefully stir in the boiling water until the batter is smooth. The batter will be thin.

    Bake the Cake

    Pour the batter evenly into two 9-inch round cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes, then remove from pans and transfer to a wire rack to cool completely.

Dark Chocolate Mousse

    Melt the Dark Chocolate

    In a heatproof bowl, melt the dark chocolate over a double boiler, stirring until smooth. Allow to cool slightly.

    Prepare the Gelatin

    In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom.

    Whip the Cream

    In a large mixing bowl, whip 1 cup of heavy cream and sugar until soft peaks form. Gently fold in the melted chocolate.

    Combine and Chill

    Dissolve the bloomed gelatin in the microwave for about 10 seconds, then fold it into the chocolate mixture. Refrigerate for at least 1 hour to set.

White Chocolate Mousse

    Melt the White Chocolate

    In a heatproof bowl, melt the white chocolate over a double boiler, stirring until smooth. Allow to cool slightly.

Chocolate Sauce

    Make the Chocolate Sauce

    In a saucepan, combine cocoa powder, sugar, and water. Cook over medium heat, stirring until smooth and thickened, about 5-7 minutes.

    Remove from heat and stir in the vanilla extract. Allow to cool slightly before using.

Whipped Cream

    Prepare Whipped Cream

    In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside.

Assembly

    Layer the Cake

    Once the cakes have cooled, place one layer on a serving plate. Spread a layer of dark chocolate mousse on top, then place the second cake layer on top.

    Add the White Chocolate Mousse

    Spread the white chocolate mousse over the top layer and smooth it out.

    Drizzle with Chocolate Sauce

    Drizzle the prepared chocolate sauce over the top of the cake.

    Finally, dollop the whipped cream on top and garnish with chocolate shavings if desired.
