Method

Carrot Cake

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

    Mix Wet Ingredients

    In another bowl, beat together the oil, eggs, grated carrots, and vanilla extract until smooth.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the chopped walnuts.

    Bake the Cakes

    Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Cream Cheese Frosting

    Prepare the Frosting

    In a large bowl, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, mixing until well combined. Stir in the vanilla extract.

    Frost the Cake

    Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of cream cheese frosting on top, then place the second layer on top and frost the top and sides of the cake.

Caramel Sauce

    Make the Caramel

    In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a golden brown color. Add the butter and stir until melted.

    Finish the Sauce

    Remove from heat and slowly whisk in the heavy cream until smooth. Stir in the vanilla extract. Allow to cool slightly before drizzling over the frosted cake.

Whipped Cream

    Prepare the Whipped Cream

    In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

    Top each slice of the cake with a dollop of whipped cream before serving.
