Method
Chips Preparation
- 1
- 2
Fry the Chips
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the potato slices in batches, frying them until golden brown and crispy, about 3-5 minutes per batch.
- 3
Drain and Season
Remove the chips using a slotted spoon and drain them on paper towels. While still hot, sprinkle with salt and sugar to taste.
Assembly
- 4
Layer the Chips
On a large serving platter or individual plates, arrange a generous layer of the fried chips.
- 5
Add Chili
Spoon the warm chili evenly over the chips, ensuring that each chip gets a good amount.
- 6
Sprinkle Cheese
Evenly sprinkle shredded cheese over the chili, allowing it to melt slightly from the heat of the chili.
- 7
Top with Jalapeños
Add the sliced jalapeños on top of the cheese for an extra kick.
- 8
Add Sour Cream and Blue Cheese
Dollop sour cream generously on top, then drizzle blue cheese dressing over everything.
- 9
Finish with Scallions
Garnish with chopped scallions for a fresh crunch.
- 10
Add Optional Protein
If desired, add pulled pork or chicken on top for an additional protein boost.
