Method

Preparation

  1. 1

    Combine Dry Ingredients

In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Whisk to combine and break up any lumps.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until well blended.

Cooking

  1. 3

    Combine Mixtures

Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together with a spatula or whisk until just combined. Be careful not to overmix; a few lumps are okay.

  2. 4

    Heat the Griddle

Preheat a non-stick griddle or skillet over medium heat. Lightly grease it with a bit of butter or oil.

  3. 5

    Cook Pancakes

For each pancake, pour about 1/4 cup of batter onto the hot griddle. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.

  4. 6

    Serve

Remove pancakes from the griddle and keep warm. Repeat with the remaining batter. Serve warm with maple syrup and butter as desired.
