Method

Preparing the Avocado Spread

  1. 1

    Scoop Avocado

Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl.

  2. 2

    Mash Avocado

Add lemon juice, black salt, and black pepper to the avocado. Mash the mixture with a fork until you reach your desired consistency (smooth or chunky).

Cooking the Eggs

  1. 3

    Poach Eggs

In a small pot, bring water to a gentle simmer. Crack the eggs into a bowl and gently slide them into the water for poaching. Cook for about 3-4 minutes for soft yolks or longer for firmer yolks.

  2. 4

    Fry/Scramble Eggs

Alternatively, you can fry or scramble the eggs in a non-stick skillet with a little oil or butter, cooking until desired doneness.

Toasting the Bread

  1. 5

    Toast Bread

Toast the ancient grain bread slices in a toaster or on a skillet until golden brown and crispy.

Assembling the Toast

  1. 6

    Spread Avocado

Spread the mashed avocado mixture evenly over each slice of toasted bread.

  2. 7

    Add Eggs

Top each avocado spread with a poached, fried, or scrambled egg.

  3. 8

    Season Toast

Season with additional black salt and pepper to taste, if desired.

Serving

  1. 9

    Serve

Serve the avocado toast immediately, accompanied by your choice of side such as cherry tomatoes, fresh arugula, or sliced radishes.
