Drain the tofu and press it gently between paper towels to remove excess moisture. Cut it into 1-inch cubes.

Coat the Tofu
Place the cornstarch in a bowl and coat each tofu cube evenly with cornstarch.

Heat vegetable oil in a large skillet over medium-high heat. Fry the tofu cubes until they are golden brown and crispy on all sides, about 5-7 minutes. Remove and set aside.

Prepare the Sauce
In a bowl, mix together soy sauce, rice vinegar, brown sugar, ketchup, minced garlic, and grated ginger until well combined.

In the same skillet, add sliced bell peppers and pineapple chunks. Stir-fry for about 3-4 minutes until they are slightly tender.

Add the fried tofu and the sauce to the skillet. Stir well to coat all ingredients and cook for another 2-3 minutes until heated through.
