Prep & Chill

1. Chill glass

Place a rocks or wine glass in the freezer for 5–10 minutes or fill it with ice and water to chill while you assemble the cocktail.

Build the Cocktail

2. Combine ingredients

In a mixing glass or cocktail shaker filled with ice, pour 6 oz dry red wine, 1 oz dry fino or manzanilla sherry, 0.5 oz fresh lemon juice and 0.25 oz simple syrup. Add 2 dashes of orange bitters.

3. Stir gently

Stir the mixture gently for about 10–15 seconds to chill and lightly dilute. Because the base is wine, avoid aggressive shaking which can over-aerate and flatten the wine's character.

Serve

4. Strain

Discard the ice/water if you used it to chill the glass and optionally add fresh ice to the glass. Strain the cocktail from the mixing glass into the chilled glass over fresh ice (or serve up without ice if preferred).

5. Garnish & finish

Express a lemon twist over the drink to release oils, rub the peel around the glass rim and drop it in as garnish. Optionally add one more tiny dash of orange bitters on the surface for aroma.
