    Soak the beans

    Rinse the dried black beans under cold water. Place them in a large bowl, cover with cold water by at least 5 cm and soak for 8–12 hours or overnight. Drain and rinse before cooking.

    Cook beans with aromatics

    Place soaked and drained beans into a large heavy pot or Dutch oven. Add 2–3 liters of fresh water to cover the beans by about 3–4 cm. Add 3 bay leaves. Bring to a boil over high heat, then reduce to a simmer. Skim any foam that rises. Partially cover and simmer gently while you prepare and cook the meats (approximately 1–1.5 hours), until beans are tender but not falling apart. Add 1–2 tbs coarse salt toward the end of the bean cooking (after about 45–60 minutes) and adjust later to taste.

    Finish bean texture

    If cooking time for meats extends beyond bean doneness, keep beans warm and partially submerged — add hot water if necessary. You may lightly mash a few beans against the pot wall to slightly thicken the broth if desired.

Meats (traditional mix)

    Prepare salted meats: If using very salty pancetta or cured hock, soak them in cold water for 1–2 hours, changing water once, to remove excess salt. Drain before cooking.

    Brown the pork shoulder and bacon: In a large heavy skillet or the same Dutch oven set over medium-high heat, add 1 tbs oil. Brown pork shoulder cubes in batches until nicely caramelized on all sides (about 5–7 minutes per batch). Remove to a plate. Add the chopped smoked bacon and pancetta; cook until fat renders and edges brown (4–6 minutes). Remove and reserve with pork shoulder.

    Cook the sausages and hock: In the same pan, add a little more oil if needed and brown the linguiça and calabresa slices for 2–3 minutes per side until browned. If using a ham/pork hock, add it whole to the pot of beans early (while beans simmer) so it can simmer and tenderize for 1–1.5 hours; remove, debone or slice, and return meat to the beans later.

    Combine meats with beans: Transfer the browned pork shoulder, bacon/pancetta, sliced sausages and any deboned hock meat into the pot with the simmering beans about 30–45 minutes before the end of bean cooking, so flavors meld and meat finishes cooking through. Continue to simmer gently, uncovered or partially covered, until beans are tender and meats are very tender (another 30–45 minutes). Skim excess fat from the surface as desired.

Aromatics & Sofrito (Refogado)

    Make the refogado: In a medium skillet, heat 4 tbs vegetable oil over medium heat. Add the finely chopped onions and cook, stirring, until translucent and starting to color, about 6–8 minutes. Add the minced garlic, diced red bell pepper and chopped tomato (if using) and cook another 3–4 minutes until soft and fragrant. Stir in smoked paprika, ground black pepper and ground cumin (if using) and cook 30–60 seconds to bloom the spices.

    Add the refogado to the beans: Spoon the cooked onion-garlic mixture into the pot with the beans and meats. Stir gently to combine. Simmer together for at least 15–20 minutes to allow the refogado flavors to meld into the stew.

Seasoning & Finish

    Adjust seasoning and acidity: About 10–15 minutes before serving, taste the feijoada. Add additional coarse salt as needed, and squeeze in the juice of half an orange to brighten and balance the richness. Add the extra bay leaf and simmer briefly. Remove bay leaves and the whole hock bone (if used) before serving. Stir in chopped parsley or cilantro just before serving for a fresh finish.

    Rest and meld: Turn off the heat and let the feijoada rest for 10 minutes so flavors settle. Feijoada often improves if made a few hours ahead and gently reheated — flavors will deepen.

To Serve

    Prepare accompaniments: Steam white rice. Thinly slice the collard greens, then sauté quickly with a little oil and 2 minced garlic cloves until wilted but bright green (2–3 minutes). Heat farofa if it’s pre-made, or prepare simple farofa by toasting manioc flour in a little butter with a pinch of salt until golden.

    Plate: Serve feijoada ladled over or beside white rice with a portion of sautéed collard greens, a spoonful of farofa, and orange slices on the side. Offer hot sauce or extra orange wedges if desired.
