Preparation

Prepare the Apples

Wash and slice the fresh apples into thin wedges, removing the core. Set aside.

Combine Ingredients

In a large pot, pour in the apple cider, calvados, ice wine, and oloroso sherry. Stir gently to combine.

Add Spices

Add the whole cloves, cinnamon sticks, star anise, brown sugar, and nutmeg to the pot. Stir well to combine all the spices into the liquid.

Cooking

Heat the Cider

Place the pot over medium heat and warm the mixture until it is just below boiling, stirring occasionally. Do not let it boil as this can alter the flavors.

Simmer

Once heated, reduce the heat to low and let the mixture simmer for about 20-30 minutes. This will allow the flavors to meld together beautifully.

Add Apple Wedges

After simmering, add the sliced apples to the pot and continue to heat for an additional 10 minutes, allowing the apples to soften and infuse their flavor into the cider.

Serving

Strain and Serve

Once ready, remove the pot from the heat and use a fine mesh strainer to strain out the spices and apple wedges from the cider. Serve the hot mulled cider warm in mugs or heatproof glasses.

Garnish each serving with an additional cinnamon stick or a slice of fresh apple if desired.
