For the Po' Boy Sandwich

    Prepare the Shrimp

    In a large bowl, combine the buttermilk and Cajun seasoning. Add the shrimp and let marinate for at least 30 minutes.

    Set up the Breading Station

    In one bowl, place the all-purpose flour mixed with salt and black pepper. In another bowl, beat the eggs. In a third bowl, place the cornmeal.

    Bread the Shrimp

    Remove shrimp from the marinade. Dredge each shrimp in the flour, dip into the beaten eggs, and then coat with cornmeal. Place the breaded shrimp on a plate.

    Fry the Shrimp

    In a deep skillet, heat vegetable oil over medium-high heat until hot. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
