Method

Preparing the Fish

    Make the Batter

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold beer until the batter is smooth and well combined.

    Heat the Oil

    In a deep fryer or large heavy pot, heat the oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

    Coat the Fish

    Dip each fish fillet into the batter, ensuring it's fully coated. Allow any excess batter to drip off.

    Fry the Fish

    Carefully place the battered fish into the hot oil. Fry for about 4-6 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Preparing the Chips

    Cut the Potatoes

    Peel the potatoes and cut them into thick chips, about 1 inch wide.

    Soak the Chips

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, which helps them to become crispy.

    Fry the Chips (First Fry)

    Heat the oil in another pot or fryer to 325°F (160°C). Drain the soaked potatoes and fry them in batches for 4-5 minutes until they are soft but not colored. Remove and drain on paper towels.

    Fry the Chips (Second Fry)

    Increase the oil temperature to 375°F (190°C). Fry the chips again in batches for an additional 3-4 minutes until they are golden and crispy. Remove and drain on paper towels. Season with salt.

Serving

    Serve the hot fish alongside the crispy chips. Add a side of tartar sauce and lemon wedges for garnish.
