Navy Bean and Ham Soup

    Prepare the Beans

    Soak the navy beans in water overnight or for at least 6 hours. Drain and rinse before use.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add chopped onion, diced carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Ham

    Add minced garlic and the ham hock to the pot. Cook for another 2 minutes, stirring occasionally.

    Combine Ingredients

    Add the soaked navy beans, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot. Stir to combine.

    Simmer the Soup

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beans are tender.

    Final Touch

    Remove the ham hock, shred the meat, and return it to the soup. Taste and adjust seasoning if necessary.

    Chop the potato into small cubes and prepare the mixed vegetables.
