Prepare the Fish

Make the Batter
In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cold water until smooth. The batter should be thick enough to coat the fish.

Heat the Oil
In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Dunk each cod fillet into the batter, ensuring it is fully coated, then carefully place it in the hot oil. Fry for about 4-5 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
Make the Tartar Sauce

Combine Ingredients
In a bowl, combine the mayonnaise, dill pickles, lemon juice, capers, salt, and black pepper. Mix well and adjust seasoning to taste.
Assemble the Sandwich

Prepare the Buns
Toast the burger buns lightly on a skillet or in a toaster.

Layer the Ingredients
On the bottom half of each bun, place a lettuce leaf, followed by a fried cod fillet, a slice of tomato, and a slice of cheese (if using).

Spread a generous amount of tartar sauce on the top half of the bun.

Place the top half of the bun on the sandwich and serve immediately.
