    Prepare the potatoes

    Peel the russet potatoes and cut them into thick fries, about 1/4 inch wide.

    Soak the fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the oil

    In a large pot, heat 2 cups of vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry the potatoes (first fry)

    Drain the soaked fries and pat them dry with paper towels. Fry them in the hot oil for about 5 minutes until soft but not brown. Remove and drain on paper towels.

    Fry the potatoes (second fry)

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again for another 3-4 minutes until golden brown and crispy. Drain on paper towels and sprinkle with salt.

    Make the batter

    In a large bowl, mix together 1 cup of all-purpose flour, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Gradually whisk in 1 cup of cold sparkling water until the batter is smooth and slightly thick.

    Heat the oil

    In a separate large pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the fish

    Pat the cod fillets dry with paper towels. Dip each fillet into the batter, ensuring it is fully coated.

    Fry the fish

    Carefully lower the battered fish fillets into the hot oil, frying 2-3 fillets at a time for about 5-7 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
