Dag's Chili Cheese Fries Recipe

Prep the Potatoes
Wash and peel the russet potatoes. Cut them into thick fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Season the Fries
Remove the fries from the oil and place them on paper towels to drain. Sprinkle with salt while they are still hot.
Chili

Cook the Beef
In a large pot, brown the ground beef over medium heat until fully cooked, breaking it up with a spatula as it cooks.

Combine the Ingredients
Stir in the canned diced tomatoes, kidney beans, chili powder, ground cumin, salt, black pepper, and water.

Simmer the Chili
Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
Assembly

Layer the Fries
On a large serving platter, place a generous layer of hot fries.

Add the Chili
Spoon the homemade chili over the fries evenly.

Top with Cheese
Sprinkle the shredded cheddar cheese over the chili. Allow it to melt slightly.

Top with sliced green onions for added flavor and color before serving.
