    Clean and Prepare the Mushrooms

    Thoroughly clean the fresh mushrooms under cold running water. Pat them dry with a paper towel. Remove the stems if desired, but leave the caps intact for frying.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until evenly mixed. Gradually add the ice-cold water while whisking until the batter is smooth and thick enough to coat the back of a spoon.

    Heat the Oil

    In a large deep skillet or frying pan, add the vegetable oil and heat it over medium-high heat until hot (about 350°F or 175°C).

    Coat and Fry the Mushrooms

    Dip each mushroom cap into the batter, allowing excess batter to drip off. Carefully place the battered mushroom in the hot oil. Fry in batches to avoid overcrowding, cooking for about 3-4 minutes or until golden brown and crispy.
