Prepare the Grits
In a medium saucepan, bring water and salt to a boil. Stir in grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally until thickened. Stir in heavy cream and keep warm.

Cook the Pork Belly
In a skillet over medium heat, add the smoked pork belly and cook until crispy, about 5-7 minutes. Remove from the skillet and set aside.

Cook the Shrimp
Season the shrimp with paprika, cayenne pepper, black pepper, and garlic. Add to the skillet with the trinity and cook until shrimp are pink and opaque, about 3-4 minutes.

Make Chipotle Butter Sauce
In a small saucepan, melt butter and stir in chipotle peppers and lemon juice. Cook for 2-3 minutes until fragrant.

Assemble the Dish
Serve the creamy grits topped with the crispy pork belly, sautéed shrimp and trinity, drizzled with chipotle butter sauce.
