Chicken and Sauce

Method

Preparation

1

Prepare the Chicken

Marinate the chicken thighs in buttermilk and hot sauce for at least 1 hour, preferably overnight.

2

Make the B&B Pickles

In a saucepan, combine vinegar, sugar, salt, mustard seeds, and black peppercorns. Bring to a simmer until sugar dissolves. Pour over sliced cucumbers and garlic in a jar. Let it cool and refrigerate for at least 2 hours.

3

Prepare Habanero Ranch

In a bowl, combine mayonnaise, sour cream, finely chopped habanero, garlic powder, dill, and salt. Mix well and refrigerate until ready to use.

4

Fry the Chicken

In a shallow dish, mix flour, garlic powder, onion powder, paprika, salt, and black pepper. Dredge marinated chicken thighs in this flour mixture. Heat vegetable oil in a skillet over medium heat and fry the chicken until golden brown and cooked through, about 5-7 minutes per side.

5

Assemble the Sandwich

On each potato roll, spread a layer of habanero ranch, place the fried chicken, add pickles, and drizzle with additional hot sauce if desired. Close the sandwich and serve!
