Prepare the Beans
Rinse the Camellia red beans under cold water. Soak them overnight in plenty of water.

Cook the Ham Hocks
In a large pot, add the smoked ham hocks and cover them with water. Bring to a boil, then reduce heat and simmer for about 30 minutes.

Add the Beans
Drain the soaked beans and add them to the pot with the ham hocks. Cover with fresh water and simmer for 1 to 1.5 hours or until beans are tender.

Season the Dish
Season with salt, pepper, and other spices to taste. Simmer for an additional 15-20 minutes.

Prepare the Rice
While the beans are simmering, cook the white rice according to package instructions.

Serve
Serve the red beans over the cooked white rice, garnished with chopped green onions, alongside a piece of Cypress cornbread.
