Prepare the Pickled Peaches
If using store-bought pickled peaches, skip to the next step. To make pickled peaches, slice fresh peaches and combine them with vinegar, sugar, and spices in a jar. Let them sit in the refrigerator for at least 2 hours or overnight.

Make the Vinaigrette
In a small bowl, whisk together orange juice, olive oil, poppy seeds, salt, and pepper. Set aside.

Assemble the Salad
In a large bowl, combine mixed greens, pickled peaches, mint leaves, and thinly sliced red onion. Toss gently to combine.

Top the salad with fresh blueberries, pistachios, and pieces of burrata cheese.
