    Prepare the Pancetta

    In a skillet over medium heat, render the pancetta until crispy. Remove from the skillet and set aside, leaving the fat in the skillet.

    Sear the Salmon

    Season the salmon fillets with salt and black pepper. In the same skillet, add olive oil and sear the salmon fillets for about 4-5 minutes on each side or until they are golden brown and cooked through. Remove from the skillet and keep warm.

    Cook the Gnocchi

    In salted boiling water, cook the ricotta gnocchi according to package instructions until they float. Drain and set aside.

    Make the Boursin Pesto Cream

    In the same skillet, add heavy cream and Boursin cheese. Stir over medium heat until the cheese is melted and the sauce is smooth.

    Add Vegetables

    Chop the roasted red bell pepper and asparagus into bite-sized pieces. Add them to the sauce along with the peas and southern squash. Cook for an additional 5 minutes until the vegetables are tender.

    Combine

    Gently fold the cooked gnocchi into the sauce and stir to combine. Serve the gnocchi topped with the seared salmon and crispy pancetta.
