Preheat the Oven
Preheat your oven to 400°F (200°C) and grease a 9-inch square baking dish or cast-iron skillet.

Mix Dry Ingredients
In a large bowl, combine the cornmeal, flour, baking powder, baking soda, salt, and sugar. Whisk until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Add Flavorings
Fold in the caramelized onions, diced jalapeños, and chopped sundried tomatoes until evenly distributed.

Bake
Pour the batter into the prepared baking dish and smooth the top. Bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve
Allow the cornbread to cool for a few minutes before slicing. Serve warm with additional sundried tomato butter, if desired.
