Prepare the Mixture
In a large bowl, combine the chorizo sausage (removed from casing), cooked white rice, chopped green onions, minced garlic, beaten eggs, salt, and black pepper. Mix until well combined.

Form the Balls
Take a small handful of the mixture and roll it into a ball, about 1.5 inches in diameter. Repeat until all the mixture is used.

Bread the Balls
Roll each ball in breadcrumbs until fully coated. Set aside.

Fry the Balls
In a deep skillet or fryer, heat the oil over medium-high heat until hot. Fry the boudin balls in batches for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
