Cooking Quinoa

Rinse Quinoa

Place the quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes to remove its natural coating, called saponin, which can be bitter.

Cook Quinoa

In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat, then reduce heat to low and cover the saucepan. Cook for about 15 minutes or until all the water is absorbed.

Fluff Quinoa

Remove from heat and let sit covered for 5 minutes. Then fluff quinoa with a fork and set aside.

Preparing Vegetables

Cook Potatoes

Peel the potatoes and cut them into small cubes. In a pot, boil water and add the cubed potatoes. Cook for about 10-12 minutes or until tender. Drain and set aside.

Chop Vegetables

Dice the red bell pepper and red onion into small pieces. Set aside.

Chop Cilantro

Finely chop the fresh cilantro and set aside.

Mixing the Salad

Combine Ingredients

In a large mixing bowl, combine the cooked quinoa, boiled potatoes, diced red bell pepper, diced red onion, and chopped cilantro.

Season Salad

Drizzle with olive oil, squeeze the lime juice over the mixture, and season with salt and black pepper. Mix well to combine all ingredients.

Serve the salad in bowls. If desired, top with sliced avocado and crumbled feta cheese for added flavor.
