Preparation
Marinate the Chicken
In a bowl, combine the diced chicken breast with 2 tablespoons of soy sauce, a pinch of salt, and black pepper. Mix well and let it marinate for at least 15 minutes.
Prepare the Shrimp
In another bowl, toss the shrimp with 1 tablespoon of lime juice and a sprinkle of salt and black pepper. Set aside.
Cooking
Sauté the Vegetables
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the minced garlic, sliced onion, and bell pepper. Stir-fry for 2-3 minutes until they begin to soften.
Cook the Chicken
Add the marinated chicken to the skillet. Stir-fry for about 5-7 minutes until the chicken is cooked through and no longer pink.
Add the Shrimp
Add the prepared shrimp to the skillet. Cook for an additional 2-3 minutes until the shrimp are pink and opaque.
Add Zucchini and Sauce
Incorporate the sliced zucchini, oyster sauce, Peruvian yellow pepper paste, and remaining soy sauce. Stir well and cook for another 3-4 minutes until the zucchini is tender.
Finish with Cilantro
Remove from heat and stir in the chopped cilantro and lime juice. Adjust seasoning with salt and black pepper if necessary.
Serving
Combine with Rice
Serve the chicken and shrimp mixture over a bed of cooked rice, garnishing with additional cilantro if desired.
