Marinate the Pork

In a large bowl, combine the pork loin with olive oil, lime juice, minced garlic, salt, and black pepper. Ensure the pork is well coated. Cover and let it marinate in the refrigerator for at least 1 hour.

Chop Vegetables

While the pork marinates, chop the red and yellow bell peppers, red onion, and cilantro. Set aside.

In a separate bowl, mix the aji amarillo paste, mayonnaise, and a pinch of salt and black pepper. Stir until well combined and set aside.

Cook the Pork

Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 6-7 minutes on each side, or until the internal temperature reaches 145°F (63°C).

Sauté the Vegetables

In a separate skillet, add a tablespoon of olive oil over medium heat. Add the chopped red onion and bell peppers and sauté for about 5-7 minutes until they are softened.

Once the pork is cooked, let it rest for a few minutes before slicing it into thin strips. In a serving platter, layer the sautéed vegetables, followed by the sliced pork, and drizzle with the prepared sauce. Garnish with chopped cilantro.
