    Prepare the Sweet Tea

    In a pot, bring 4 cups of water to a boil. Remove from heat and add the sugar, stirring until dissolved. Add the tea bags and let steep for 10-15 minutes. Remove tea bags and allow the sweet tea to cool to room temperature.

    Combine Ingredients

    Once the sweet tea has cooled, pour it into a clean glass jar (at least 1-gallon capacity). Add 1 cup of starter tea and gently place the SCOBY on top of the liquid.

    Fermentation

    Cover the jar with a clean cloth and secure it with a rubber band. Place the jar in a warm, dark place (around 70-85°F) for 7 to 14 days, depending on your taste preference.

    Taste Testing

    After about a week, start tasting the kombucha daily until it reaches your desired level of fermentation. The longer it ferments, the less sweet and more tangy it becomes.

    Bottling

    Once ready, carefully remove the SCOBY and set it aside for your next batch. Pour the kombucha into bottles, leaving some space at the top. If desired, add flavoring ingredients before sealing the bottles.

    Seal the bottles and leave them at room temperature for 3-7 days for carbonation. Then, refrigerate to stop fermentation.
